Chef Doug's Recipe for Kedgeree

What is kedgeree? It could be loosely labeled as Scottish Stir Fry. Try this recipe and see if you don't make it a part of your weekly fare at home!

Recipe for Kedgeree

3 Cups cooked rice
4 hard cooked eggs, coarsely diced
1 Tbsp of butter
1 medium onion, coarsely diced
1/3 pound lox, cut into 1/2-inch strips
1 9-oz package of frozen shoepeg white corn without sauce
1 9-oz package of frozen cut green beans
1 8-oz carton of sour cream

Cook the onions in the butter in a large skillet or frying pan over low to medium heat until transparent. Increase heat to medium high. Add rice, lox, hard cooked eggs and vegetables. Stir until all ingredients are thoroughly heated. Remove from heat and stir in sour cream.

Notes:

Serve hot for breakfast, lunch or dinner with hot crusty bread.

Great as a cold leftover.

Substitute peas for the green beans. For that matter, substitute any of your favorite vegetables.

Substitute any smoked fish for the lox.
